- A: Castello Blue takes between 21 and 25 days, while Castello White ripens between 18 and 20 days. When Castello Blue is 21 to 25 days old it is still very fresh, and will continue to enhance its flavour and become even creamier as it nears its best before date. When Castello White is 20 days old it is already mature in flavour.

- A: Castello Blue becomes stronger in flavour and creamier in texture the older it becomes, meaning the colour of the cheese may intensify. As long as the cheese has been kept in accordance with the storage instructions on the pack and is eaten by the best before date, then it should be fine to eat.
