Selecting your cheeseboard
On many occasions the Marquis of Castello® is asked to divulge the secret to the perfect cheeseboard and on every occasion he replies 'with cheeseboards, as with life, never be dull'.
The key is a variety of between three and five cheeses. As a simple rule use one soft, one firm, one blue and one that no one would expect.
Cheese tips
Arranging your hard cheeses around the edge of your board will make them easier to cut at the dinner table.
In general the rind of soft cheeses is edible while the rind of hard cheeses is not.
Cut the cheese from rind to tip to experience the full texture and flavour of the cheese.
